Holy good lord of all things peanut butter and chocolate. Nutter Butter truffles have come screaming into my life thanks to my sister, and they shall hold a special place in my heart forevermore.
All you need are 4 trashy ingredients, easily found at any grocery store, and your life will be immeasurably improved.
Ready? Here’s the list:
- 1 package Nutter Butters (don’t read the ingredient list)
- 1 8oz brick cream cheese, softened
- 1/4 cup peanut butter
- 2 or more cups semi sweet chocolate chips, melted, depending on how much chocolate you want on the outside. I think we went over the 2 cups, which is a 12 oz package, so absolutely buy a larger bag of them.
- 1/4 cup chopped peanuts
Oops! That’s 5 ingredients, but I’m not changing the title because the chopped peanuts are optional. Except they totally are not optional. You absolutely need them to give a little crunch and round out this recipe perfectly.
Dump the cookies into your food processor and grind ’em all up.
Add in the peanut butter and softened cream cheese (I separated the cream cheese into smaller bits first as opposed to globbing the whole brick in at once.)
Mix it all up until it’s mixed all up.
Form lots of little 1″ balls with your hands and place them all over a wax paper or parchment paper-lined baking pan.
Melt your chocolate chips in the microwave or over a double boiler. We melt ours in the microwave, in a glass bowl, stirring after each 30 seconds or so.
You can use 1 or 2 forks to hold each truffle and dunk it into the chocolate to coat it.
Sprinkle some chopped nuts over each ball (no giggling here, you naughty kitty) before the chocolate sets up, then pop the pan into the fridge to set the chocolate up for about a half hour.
I recommend trying one before you put the pan in the oven so you can get melty chocolate all over your face and hands and feel like a damn animal.
If you feverishly stuff all the Nutter Butter truffles into your face and are looking around for the next dessert to consume, try replacing Nutter Butters with Oreos. Yum. Um.
